A kitchen is the hardest room in a house to fit out of a catalogue. Walls are rarely square, floors fall away from one corner to another, and the run of a worktop has to clear a window casing that was set a century before anybody thought about a dishwasher. Cabinets made for the room absorb all of that in the carcase and the scribe, instead of leaving it to a strip of filler at the end of the run.
Most kitchen work divides into two families of carcase. A face-frame cabinet carries a solid frame across the front edge of the box, which stiffens the opening and gives a door something forgiving to land against; it is the older American way of building and it tolerates an out-of-true wall gracefully. A frameless carcase leaves the front of the box open, so the doors cover the whole face and the interior gains the width the frame would have taken. Neither is better in the abstract. The frame suits a traditional door and a period room; the frameless box suits a flat door, wide drawers and a kitchen that wants every usable inch.
Drawers do more of the work in a modern kitchen than doors do, and they are where the difference between a built cabinet and a boxed one shows first. A drawer box jointed at the corners and running on full-extension hardware will still be square when the kitchen is twenty years old. Deep pan drawers below the hob, a shallow tray for utensils, and a full-width drawer under the sink cut around the trap between them replace most of the crouching and reaching that a run of plain base cupboards asks of a cook.
The last decisions are usually about how the cabinetry meets everything that is not cabinetry. Worktop overhang, appliance clearances, the height of a bar return, the way a tall pantry ends against a doorway: these are the measurements that make a kitchen feel deliberate rather than assembled. We draw them before anything is cut, so the room that arrives on installation day is the room that was agreed on paper.
